GRP Cider hiking trail

The wood-covered, Pays d’Othe is also a land of orchards, where they produce a type of cider, quite different from that from Brittany or Normandy. The GRP cider hiking trail starts at Villeneuve-au-Chemin, where you’ll encounter a surprising monument perched on a rocky outcrop above the village. The Chapel of Saint-Joseph-des-Anges has a tall steeple on which an imposing statue of the Virgin sits. No-less surprising is another religious building in the neighbouring village of Vosnon. Here, the diminutive wooden-built church transports visitors to more Nordic, or Slavic latitudes. Prepare yourself for a change of scene! Wood and forests reign in this unusual part of the region, straddling Champagne and Burgundy. The land is strewn with flint and many orchards have been planted, where a tangy, fruity cider is made from a range of apple varieties, some of which are ancient. At Eaux-Puiseaux, a cider maker has opened a museum dedicated to his passion, packed with cider apple presses, grinders and stills. Once a year, in September, there is a “old-style cider apple pressing”. You can’t leave Eaux-Puiseaux without visiting the church, which houses a wonderful collection of modern stained-glass windows by a master glass-maker from Troyes. Based on the creation of the world, these new windows replaced the old windows, blown in by the storms in 1999.Next, you’ll journey through the woods to reach Maraye-en-Othe, where a country history museum has been developed in a barn. You can also buy cider, apple juice, ratafia and other drinks here, as well as at Saint-Mards-en-Othe, your next stop. The village’s name is linked to a famous group of wartime volunteer fighters. The Pays d’Othe hid many members of the French Resistance and a monument has been erected to commemorate their sacrifice. The road to Nogent-en-Othe is haunted by the memory of these underground combatants, while the church in this small village is adorned with murals dating back to the 16th century, that have been entirely restored. After a lengthy section in the woods you’ll reach your journey’s end in the enchanting Pays d’Othe, where the “longères”, these long, narrow brick-built farmhouses decorated with friezes, sometimes just make you want to settle down.

The wine and cheese hiking trail

This walking trail takes you for a stroll through hedge-lined farmland and forests, just a stone’s throw from some prestigious vineyards. You’ll discover a part of rural France that derives its fortune from the soil. Credit where credit is due, so the walking trail starts in Chaource, a market town made famous worldwide for its artistic masterpiece and for a culinary speciality too. The masterpiece is the Burial of Christ, depicting the entombment of Jesus. It was created in 1515 by an unknown sculptor, who was later baptised, “The Master of Chaource”. The culinary speciality is Chaource cheese, a famous cylindrical-shaped, ladle-moulded whole cow’s milk soft cheese with a bloomy rind. It is made in the local cheese dairy, which you can visit. Not short on surprises, Chaource is also renowned for its chateau and golf club (which are combined) and its cider-making.Leaving the town, the trail heads for Maisons-lès-Chaource, where the puppet and coopers (barrel-making) museum are worth a detour. After strolling through the green and pleasant countryside, you arrive at Balnot-la-Grange, then Villiers-le-Bois, a tiny village that has managed the feat of organising two summer classical music concerts, as well as a bi-annual series of exhibitions. The next village, Etourvy, meets up with the GR 654 which goes to Santiago de Compostella. Around twenty kilometres from here are the prestigious vineyards of Riceys, in Champagne, and Chablis, in Burgundy. They share the same 150 million-year-old, calcareous Kimmeridgean subsoils.The next stop takes you to Chesley, where a craft tile-making firm has secured the label of “Entreprise du Patrimoine Vivant”, in recognition of its traditional excellence. Les Carreaux de Chesley produce ceramic and terracotta tiles using ancestral know-how. At Cussangy, you’ll find another company in an entirely different sector. Les Champignons de Cussangy grow oyster and button mushrooms that are highly-prized by foodies. The house speciality is Fondue de Champignons in Chaource cheese. And, so, it’s time to return to the eponymous town of Chaource, if only for the pleasure of wandering through the beautiful Forest of Cussangy. One-third of the Pays d’Armance is covered in forest, with oak being the dominant species.

With its simple Latin cross plan, the church comprises a single nave of three bays, a projecting transept and a three-sided apse. The building is homogeneous, having been begun from the east during the first quarter of the 16th century. The two western bays are slightly more recent, dating from the second quarter or middle of the 16th century (an altar was erected in 1560). The church ends with a handsome sculpted western portal in the flamboyant Renaissance style, featuring the painted signatures of L. Cabutel and C. Paiso. Original stained glass remains in the three bays of the apse and, in fragmentary form, in two bays of the transept and one east bay of the nave. The three apse windows are composites, combining panels from at least five different bays. Restored between 1973 and 1979 by the Vinum workshop, they depict the themes of Genesis, probably modelled on the Madeleine de Troyes, the Tree of Jesse painted after the suite of cartoons used in the church of Les Noës-près-Troyes, the Life of the Virgin and Christ, and the Life of St. John the Baptist, similar to those in the churches of Ceffonds (52) and Ormes (10). The axis bay, whose inscribed date has been interpreted as 1518, shows a donating priest presented by Saint Nicolas and various more or less complete scenes such as the Crucifixion, the Annunciation, the Adoration of the Magi and a figure of the Baptist. The nave bay with its 16th-century fragments bears the date 1537, and the church was listed as a historic monument on May 7, 1926. The old stained-glass windows have been listed since December 27, 1913. Historically, the territory's watercourses and their watersheds have been developed for different uses (exploitation of hydraulic power with mills, agricultural development with drainage, rectification of watercourses ...). These developments have led to a significant deterioration in the ecological quality of watercourses, reflected in particular by: a loss of biodiversity in aquatic and humid environments; a disconnection of wetlands with their watercourses; a deterioration in the physico-chemical quality of the water; However, these environments have a major role to play both in terms of maintaining the local ecological balance (role of ecological corridor, habitat and source of food for wildlife), as in health terms (role of filter of diffuse pollution) and public security (slowing down of floods). Thus, thanks to collaborative work between the Municipality of Davrey and the Community of Communes of Chaourçois and Val d'Armance, the Syndicat Mixte du Bassin Versant de l'Armançon has created an unprecedented ecosystem restoration project by its scale and its assembly, in order to halt the degradation of the natural environments on the territory. The hydromorphological restoration of rivers is a major environmental issue. The restoration of the Armance and Landion on the Davrey site made it possible to reconnect the wetlands by creating in particular: 5 ponds; A wetland of 3 hectares; 5000 m² of valleys and spawning grounds. The main objective of opening to the public is to discover and raise awareness of aquatic and humid environments, their ecologies, as well as their heritage and landscape interests. Thus, 6 thematic panels have been installed and address the following themes: Ponds, valley and platière; Ornithology; Botany and aquatic plant species; Rivers (habitats, typology); History of the activity of the valley (breeding in particular); Wetlands and their interests. To this, other educational facilities have been installed on the site including: Two ornithological observatories allowing bird watching on the plateau; A path connecting the path of the Association Foncière de Remembrement (AFR) along the Landion and the path of the AFR along the Armance; A gateway to cross the Armance river. A part of the walking route accessible to wheelchairs in the northern part is planned. This Landion and Armance restoration project, in addition to being beneficial for the aquatic environment, fits perfectly into the local tourist dynamic. Indeed, there is a discovery walk in the town of Davrey, to learn more about the heritage of the village. This walk has a path, "Le chemin de la Prairie", which already allows you to walk alongside the Landion. The SMBVA project, having restored and developed this path, will allow visitors to circulate and observe the fauna and flora typical of wetlands as best as possible during this walk.
