For nearly 30 years, winegrowers have been rediscovering the knowledge and flavour of this sweet wine, around Queyssac, Meyssac and Beaulieu-sur-Dordogne. The wine of Paille de Corrèze, which obtained the AOC in 2017, is produced from red grapes (Cabernet Franc and Cabernet Sauvignon) or white grapes (Chardonnay, Sauvignon). The best bunches are harvested by hand. They are placed on racks before being put to dry in ventilated rooms. As Christmas approaches, the grapes are pressed, the wine is then aged for a minimum of 2 years and bottled. The "Miel des Muses" is served as an aperitif, but also to accompany foie gras, cheeses or desserts.
