In Chasnais, near the town of Luçon, and just 20 minutes from the beaches, Nicolas and Benjamin have been welcoming you to the Moulin Cécile since May 2022. Benjamin works in the kitchen while Nicolas welcomes you as host.
Cécile is the first name of Chef Benjamin Blanchet's grandmother, who always encouraged him in this passionate profession. The chef wanted to pay tribute to her on his return to his native Vendée, where it all began!
Even as a child he was already cooking family meals on Sundays, and his passion has never left him since!
After studying cookery, he won his first place at La Mirabelle, in Luçon, where Benoît Hermouet offers "sunny Vendée cuisine".
He then moved on to Savoie and Provence, where his cuisine was enriched by some very special flavours.
Nicolas grew up in Dijon, a city renowned for its gastronomy, before arriving in Paris in 1997, where he chose to work in the boutiques of the biggest fashion brands. This experience gave him a keen eye for detail and a quest for excellence, values he shares with Benjamin!
Together they set up shop in the former Auberge du Moulin, an institution over 40 years old, which had opened at the end of April 1984 when the Chef was born!
By renaming the place Le Moulin Cécile, Benjamin is paying tribute to his grandmother Cécile, who gave him a taste for cooking and pastry-making, and who has always encouraged him in this passionate profession.
