Laurent and Fabien Caussé are the 8th generation of winemakers on the family estate. They cultivate 50 hectares of vines and create a diversity of five ranges of wines made in the traditional way.
Legend has it that the Sarrabelle spring, which gushes out near the medieval Château de Montaigut, was the place where the beautiful Yolande met her lover. Its name comes from the Occitan word "sarro-bello", which means "to embrace one's beauty". The lower parts of the castle, destroyed during the Albigensian Crusade, have been preserved, with the Chapelle de Montaigut above.

The estate's approach to amphorae is not to use them as transport containers, but to exploit the natural permeability of baked clay during wine ageing. Micro-oxidation is already widely used in oak barrel ageing. It rounds out the tannins and adds complexity to great vintages. The shape of the amphora, the nature of the earth blend and the temperature at which it is fired all play a part in its behaviour towards the wine. Because it is clay, the amphora is neutral in flavour and helps the wine to express its subtle aromas powerfully, with a slight drop in acidity and the development of a richer, fuller structure.
The estate has 4 white grape varieties and 6 red grape varieties.
In the white varieties, we grow the traditional Gaillac varieties: len-de-l'el or (Far from the eye), Mauzac and Muscadelle, as well as Chardonnay, which is not a conventional variety in the region.
The 6 red grape varieties grown are: Braucol, also known as Fer Servadou, Duras, Syrah and complementary varieties: Merlot, Cabernet Sauvignon and Gamay.
The 50-hectare estate is located in Lisle sur Tarn, around 30 minutes from Toulouse and 15 minutes from Albi (exit 8 - A68).

From 02/01 to 31/12 Opening hours on Monday, Tuesday, Wednesday, Thursday, Friday and Saturday between 9 am and 12 pm and between 2 pm and 7 pm. Closed on Sunday.
