The Quarries have been exploited since the Romans: places of extraction, crushing, sawing and sculpture. The Espace Simone presents an exhibition of tools from the stone industry and fossils made of Jaumont stone, as well as the military periods of 1870-1871 and 1914 to 1918. Jaumont stone, a contraction of "Jaune mont", is a granular limestone from the Jurassic period which owes its particular colour to iron oxide. The quarries, where it is still exploited today, cover former iron mines.
