Les Herbes folles is an organic farm, growing ancient cereals on some forty hectares and raising Longué pigs. Some of the cereals, along with the farm's own protein crops, bran and whey, are used to fatten the pigs for 10 to 12 months, before being processed into fresh meat, cured meats and charcuterie.
The other part of the cereals is ground into semi-complete flour at the farm's stone mill, to make a range of sourdough breads, traditional cakes and wood-fired cookies.
