Description

In the south of the appellation area, we raise our poultry in the respect of the local tradition and the passion of our trade pushes us to prepare them for the sale until the rolling of the festive poultries of end of the year.
3 generations have forged the spirit of the domain and we wish within the Merle family to cultivate the land and to raise animals, in the nature, by having the concern to make it renew itself so that the future generations can continue this same activity... Our poultry are exclusively fed with cereals from our farm (white corn, wheat and spelt) and dairy products. They also have free access to the meadows where they peck grass and worms. We wait 4 months for the chickens, 5 months for the hens and 8 months for the capons before maturing them in the spruce trees. We have also reconciled all the friends of the domain with our Bresse turkey, with its melting and juicy flesh, a characteristic element of all the Bresse PDO poultry, whose marbled texture and marked aroma of the flesh is unequalled.
