Between ocean and mountains, Nive and Adour, Bayonne, religious and military city and metropolis of the region, has accumulated a heritage of great wealth. In addition to its harmonious urban landscape, its monuments and ramparts, there is also an underground city of medieval origin, which rarely survives in France (more than 130 cellars).
Bayonne is a gourmet city as its markets attest: Bayonne hams, Basque ewe's milk cheeses, suckling lamb, pibales, confits and foie gras and all the fish of the ocean. The town was also the first in the kingdom to work with cocoa in the 17th century.
Finally, Bayonne is the cultural, sporting and festive capital of the Basque Country. The city has the Basque Museum and the Bonnat Museum and a Latin American theatre festival. It gathers for bullfighting, pelota, rugby, rowing... It welcomes you at the beginning of August for its famous festivals.
